  27. 20 + Prefabed Frozen Meatballs

  29. 1 tsp Granulated Garlic Powder
  30. 1 tsp Granulated Onion Powder
  31. 1 (4 oz) [reserved] Can Hatch Green Chilies
  32. 1 tsp Ground Cumin
  33. as needed Fresh Cilantro
  34. as needed Fresh Chives
  35. ● For The Sides & Garnishments
  36. as needed Warm Flour Tortillas
  37. as needed Fresh Chopoed Chives
  38. as needed Fresh Cilantro Leaves
  39. as needed Fresh Lime Wedges
  40. as needed Tortilla Chips
  41. as needed Sour Cream

Instructions to make Mike's Spicy Mexican Meatball & Rice Soup

  1. Chop all vegetables and fruits. Add to a large pot.
  2. Add everything in the Broth section to fruits and vegetables. Mix.
  3. Simmer for 30 minutes covered stirring occasionally.
  4. Add meatballs to pot. Frozen or thawed.
  5. These are some of the best prefabed meatballs I've tasted to date. They're also a great time saver.
  6. Heat your microwaveable rice for 60 seconds and add to pot.
  7. Simmer meatballs 30 minutes longer if frozen - 15 minutes if dethawed.
  8. Since seasonings can dissipate with longer simmer times, add your ingredients in your ● Soup Finish section and stir well while soup is still piping hot in the last 2 minutes. Add additional beef broth if needed. But, know that you'll want this soup a bit thick or, viscous, to eat with flour tortillas or chips.
  9. Serve with fresh warm tortillas, chips, cilantro, sour cream, shreadded Mexican 3 Cheese, chopped chives and ice cold Mexican beer. Enjoy!
